Hello Everyone,
Sorry I haven't been around for a while. I work (my "real" job) at a University and we started school this week. So this week and the week before this week have been CRAZY! So crazy that on the first day of school...I cut in front of a Freshman to get some bacon. Yep I am the crazy lady who would cut in front of a Freshman student to get her bacon fix, but I did see him the next day and he totally waved at me so I think I am forgiven. He should cyberstalk me...and YOU should cyberstalk me as well :)
I like lemons. I like berries. I like cakes.
Bake at 350 made a Lemonade Cake. To me that sounded like heaven. HEAVEN! It had what I love lemons, and I thought to myself....you know self, berries would go wonderfully with lemons. Kind of like my failed attempt at the strawberry lemonade cupcakes.
So for the recipe visit the link above. Let us get started:
Bake it up according to the recipe.
Meanwhile make yourself a fruit filling (or buy pie filling, or jam, or something that you think would go will with lemons). I had half a bag of frozen mixed berries. I poured it into a pot, added some sugar and then boiled it on the stove top.
Once that is done go on and make the lemonade glaze.
Take the cakes out and let them cool for about 10 minutes. Then do the following:
Time to make some frosting. Yummy, yummy frosting.
Then you eat it.
YUMMY. This cake is long gone and as I sit here writing about the cake I am craving, LONGING for this cake to just magically appear in my fridge. So I am going to leave you all now and see if it will be in the fridge when I open the door.

Best Chocolate Cupcake EVER!!!

that is right there is the best cupcake EVER!!!!
Want to make some? Well here ya go. Enjoy, but I warn you...this will totally ruin ANY diet!
Guinness Chocolate Cupcakes
1 cup guinness
1 cup unsalted butter
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
2 cup all-purpose flour
2 cup sugar
1 1/2 tsp baking soda
3/4 tsp salt
2 large eggs
2/3 cup light sour cream
Baileys Buttercream
2 - 4 cup confectioners sugar (depends on how thick it needs to be)
1/2 cup unsalted butter
3 tbsp baileys irish cream
- Preheat oven to 350°F. Line 24 cupcake cups with liners.
- In a saucepan over medium heat, melt butter and add Guinness. Bring to a simmer. Whisk in cocoa powder until mixture is smooth. Set aside to cool slightly.
- In a large bowl stir together flour, sugar, baking soda, and 3/4 teaspoon salt.
- In another bowl beat eggs and sour cream until thoroughly combined.
- drizzle in Guinness-chocolate mixture and beat just to combine.
- Add flour mixture and mix briefly on slow speed just until the mixture comes together.
- Using rubber spatula, fold batter until completely combined.
- Divide batter among cupcake liners, filling them 2/3 to 3/4 of the way.
- Bake cake until toothpick inserted into center comes out clean, rotating them once front to back if your oven bakes unevenly, about 17 minutes. Cool cupcakes on a rack completely.
- To make the buttercream, whip the butter in the bowl of a stand mixer fitted with the paddle attachment for several minutes until the butter is very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time.
- When the frosting looks thick enough to spread, drizzle in the Baileys (or milk) and whip it until combined. If this has made the frosting too thin (it shouldn’t, but just in case) beat in another spoonful or two of powdered sugar.

CYBERSTALK ME!!!!! (I like it).
I am slowly but surely coming down from my cheesecake high. Working on my Threadcake entry and doing other stuff like making this:
I love these flowers and guess what they are stupid easy to make (I was gonna write "super" but it came out as "stupid" and you know...I am gonna keep it that way).
Want to make these flowers and impress your friends? Well then, let us begin.
This isnt what I envisioned....but it will have to do.

Once you are done with that make a cake.
Frost your cake.
Stick flowers on.
I have LOADS of problems with this stupid cake. I was cursing the baking gods asking them WHY?!?!?
This is when I realized that my buttercream was starting to melt. I have never had this problem! Melting...WHAT ARE YOU DOING BUTTERCREAM!!!!
I scrapped off the buttercream and threw it out. Made another batch, that seemed fine...but was really soft as well.
